Grillo is an ancient white grape variety from Sicily, primarily known for its role in making the fortified Marsala wine, but also widely used for crisp, dry white wines with nutty, citrus, and apple flavours. The grape is native to Sicily, thrives in hot climates, and produces wines with a balance of body, acidity, and bold flavours that are good for both immediate enjoyment and ageing. It's also known for its versatility in food pairings, especially with seafood, vegetables and lighter meats.
